RECIPES: Mayo, Ranch & Date Syrup

As promised here are the recipes for the Mayo, Date Syrup and Ranch I use. These recipes I got offline but I tweeked a tad for my liking. Enjoy! Happy New Year!

DATE SYRUP

Ingredients:

Pitted Dates

Lemon

Water

A cup of pitted dates pulsed until chopped then blended on high speeded with 3/4 cup of water and a sprinkle of fresh lemon juice. This is used as a fantastic sweetener for items that require honey, maple syrup or sugar. It is a nice fruit substitute. Proceed with caution. Even though it is fruit it is high in sugar. This item I would not over use, but it is great to have on hand when needed.

MAYO

Ingredients:

Extra Light Olive Oil

Lemon

Sea Salt

Dijon Mustard

Eggs (x2)

**All must be room temperature**

For this I use an emulsifier hand blender.

I start by cracking both eggs into a mason jar (note this has to be wide enough to fit the blender head) - I add 1/4 cup of light olive oil, 1 tsp of dijon mustard, squeeze 1/2 of a lemon and cracked sea salt (approx 1/2 tsp).

I mix until blended.

then I start to drizzle more olive oil. Slow drizzle while continuously blending.

Continue until it reaches a mayonaise consistancy. I believe this is another 1/2 of cup of olive oil. This is a continuous slow pour while blending.

This is honestly the best mayo I have ever had. DELISH! Enjoy

RANCH ** Pictured next to the Buffalo Wings **

Ingredients:

Homemade Mayo (See Above)

Lemon

Pepper

Fresh Dill

Fresh Parsley

Fresh Chives

Onion Powder

Garlic Powder

Paprika

Water, Coconut Milk or Almond Milk

Once you have your homemade mayo you can experiment with different dressings and sauces. I use this for dipping my compliant buffalo wings. I have never tried it on salads.

I utilize a batch of the homemade mayo add another 1/2 of fresh squeezed lemon.

Pinches of pepper, paprika, garlic and onion powder.

A small bunch of finely chopped chives, parsley & dill

I hand stir until blended then I add water/almond or coconut milk depending on the consistancy I need.

For wings I keep it very thick so it is very little added. You can also add more lemon juice if you do not mind the extra lemon flavor.
